I will like to share this really great recipe with you. It's a great way to get the whole family in the kitchen and be part of the fun.
Go Wild With Berries Banana Bread
Ingredients:
1 cup multigrain flour
1 cup unbleached flour
3/4 cup quick oats
1 tbsp baking powder
1/4 tsp baking soda
1 tsp salt
4 bananas mashed
A choice of 2 large eggs, and 1/2 melted butter
or, 1/2 cup light mayonnaise (my choice)
3/4 cup granulated or brown sugar
1 cup mixed wild berries (or just cranberries)
1/2 tsp freshly squeezed lemon juice
1/2 cup nuts of your choice ( pecans, almonds, pine, hazel, walnuts. ( I just get a combination of all nut bits to get a mix)
Preheat oven to 350 degrees F, grease loaf pan. (8 1/2 by 4 1/2 by 2 1/2)
Directions:
Combine flour, oats, baking powder, baking soda, and salt in large bowl. Whisk until blended, set aside.
Whisk bananas, eggs and butter, (or mayonnaise) in bowl, add sugar, berries, nuts, and lemon juice until well blended.
Gently stir in banana mixture into flour, floding until just combined (do not over mix)
Pour into greased loaf pan, Bake until lightly browned for 45-50 minutes.
Allow to cool about 1 hour. Cut with serated bread knife into 3/4 inch slices. Arrange on platter and serve.
If you end up with extra batter, grease muffin pan and pour the rest to make muffins. Bake, test to see if a knife comes out clean. Muffins may take up to twenty minutes.
