You could buy ziplock baggies and portion control your food with them. And as a suggestion, filling them with peanuts, almonds, cashews, raisins (trail mix), filler foods like that. Making big meals and portioning them into disposable containers works very good as well.
Take twenty mintues to let your meal digest and you'll realize you don't need to eat all of your food at one time. I used to work in a car all day long too, it was horrible, but I planned my day around my meals.
